The flame ceramic really holds a steady simmer—left a lamb stew on low for two hours and it came out perfectly tender without stirring once. I've used it straight on the burner and in the oven so far, and both work flawlessly, though it does take a bit of care when lifting the heavy lid.
I've had mine on the stove and in the oven this week, and the way it distributes heat for slow simmering is honestly impressive. The lid keeps everything moist without any fuss, and cleanup was easier than I expected for a ceramic piece.
